Baked Chinese New Year Cake

烤年糕 (Kao Nian Gao)

Here's my mom's recipe for baked Chinese New Year cake! If you like red bean paste, you'll love this one.

Traditional Chinese New Year cakes are some sort of steamed sticky goop with suspended, solid, gritty red bean ~ eewww. This one's baked, golden-brown, and crispy on top. Each bite has a pocket of sweet red bean paste inside. Mmmmmmm...sooooo delicious. Of course, it's the kind my mom always made so I'm biased =)

Plus, it's shockingly easy to make.





Ingredients
3 whole eggs
2 cups milk
1/2 cup oil
1 cup sugar
2/3 tablespoon baking powder

1 lb glutonous rice flour
1 can sweetened red bean paste

Steps
1. Mix the ingredients in the first section.
2. Stir in the glutonous rice flour in gradual increments, mixing well as you go.
3. Oil a 13x9x2 pan and pout the mixture in.
4. Using a spoon, add a generous spoonful of red bean paste every inch or so into the mixture. It should sink in and submerge completely. I typically end up using about 3/4 of the can.
5. Bake at 350 degrees for 40-45 minutes. At 40 min, insert a toothpick in to check doneness. If the cake that comes out with the toothpick is clear, it's done.
