Almond Tofu
杏仁豆腐 (Xin Ren Dou Fu)
Almond tofu is a sweet, refreshing Chinese dessert. Contrary to the name, there's no soy product involved. This was always one of my favorite things to order at Chinese dessert places until I figured out how easy it is to make. =)
Serves 6-8
Ingredients
1 cup sugar
2 cups water
2 packets unflavored gelatin
4 teaspoons almond extract
1 can evaporated milk (12 oz)
1 can fruit cocktail (optional)
Steps
1. Boil the water and sugar together on medium heat.
2. Stir in gelatin according to package directions until dissolved.
3. Add the almond extract and evaporated milk, stirring well.
4. Pour into small serving cups and cool. Then refrigerate.
5. (optional) Top with canned fruit cocktail.
